Ok...I have thought about it enough...I am fixing soft beef burritos...with ice-cream with peanut butter cup drops in them for desserts...Titus2daughter got me craving peanut butter and chocolate Have a wonderful dinner and evening...Blessings to all...Sis Debbie

Well, I must admit this is what we ended up with instead of meat loaf.. someone came to look at a hound dog we were giving away and then well, time got late, so it was easier to make taco meat than meatloaf, then I fried the burrito shells to make cruchy chips.. it was actually delicious and the children were thrilled and ate a ton.. . But here, I am blessed that it doesn't really matter what I put on the table the children will eat it, and tell me it is good and ask for more.. ;D I know it is not my wonderful culinary skills because they are a bit limited in somethings.. but they have just learned that if you wish to eat, you shall eat what is on the table and be thankful to have it.. Now they like almost everything.. with a few exceptions.. Oh well, just rambling along this morning..

Tonight mom was gone running errands so I decided to surprise her and make dinner before she came home. Looking through the pantry and fridge I realized this might take a bit of creativity since we hadn't been to the store in a while and I only had about an hour. I ended up using 1 family-sized can of cream of chicken soup, 1 cream of celery soup and then just mixing things in that I found in the fridge. I ended up adding 1/2 cup green beans, 2 carrots (that I shredded instead of chopped), 2 potatoes, garlic pepper, salt, and then tasting it and realizing that for some reason it had an ever so slight after taste of something chinese, I put in 1/8 tsp of soy sauce. My brother (13yro) came in while it was simmering and said "wow! it actually smells good!" he then quickly ducked out of the room. I love my brother, LOL. Everybody said they enjoyed it thankfully! and it was nice to give mom a surprise break from cooking. Now just to attack the dishes........

What a good daughter you are! We had Evan's favorite supper tonight. Meatloaf, mashed taters and corn. I have a whole cut up chicken for tomorrow night and I'm trying to figure out some new way to cook it. Any suggestions?

I thought I would resurrect this old thread.. .. I thought this was alot of fun. Tonight I'm planning on having spaghetti with garlic bread and salad... nothing outstanding, but money being so tight, we have gone very cheap in food preparation.

we are having a quick easy casserole,
I use left over chicken cut into cubes, cooked brown rice(boil in a bag kind) and cream of soups, mix together and bake at 350 until hot.
when I put the chicken in the the bowl I add curry, then when I lay the rice in I add more curry and herbs. then I put in the cream of soups and mix it all togehter. it comes out yummy and everyone loves it. never have any left over. but we like curry.

As some of you know, i'm Scottish and we have some faourite family recipes I would like to share with you. The first one is Shepherds pie and i'm sure you have these by different names...you just need to brown and cook the nmince with some finley shopped onions, then place that in the bottom of a dish, on top of that mashed veggies. We use broccoli & carrot coz they are the favourite but you could use others, then a layer of mashed potatoes and some sprinkled grated cheddar cheese on top. Thats it...as its all cooked already, you just warm it up in the oven to serve and to melt the cheese on top. The second one is probably a little odd to my friends across the water but its called Toad in the Hole and its a family favourite, we just love it....not expensive either and very good in the winter. you'll need: For the batter: 4 oz plain flour and a little salt. 1 large egg 1/2 pint milk For 'the toad' : 2 oz lard/ fat/ butter will do. 4 large sausages 4 rashers bacon 1. Sieve the flour and salt into a basin, drop in egg and mix till smooth batter with the milk. 2. Leave to stand for min. 2 hours. 3. Melt fat in roasting tin and wrap each sausage in bacon (you can also stretch each rasher before you wrap and put a thin layer of mustard on them) 4. Place them in the fat and cook for 5 mins, in hot - to very hot oven. (450-474F , 230-240C, or gas 7-8) 5. Remove tim from oven, turn sausages and then pour the batter over them. 6. Put back in hot oven and cook for approx 35 minutes. Lower the heat to Moderate after 20 mins. Don't open the door....or the batter will collapse. Only tip is to make sure the meat / sausages are really hot before you pour on the batter.

We also make Shepherd's Pie for dinner, sometimes. It is one of our favorites! I cook some ground beef, add some onions and a little ketchup to flavor it. Simmer for awhile until the onions are tender. Also, (and you might want to start these first, because potatoes take a long time to peel!), make mashed potatoes. Then I layer the beef mixture, some corn (I usually heat up some frozen corn,) and lastly the potatoes. Garlic mashed potatoes are really good. So is cheese on top, like Sister Allene does, except some of my children don't like cheese on top, which is why I usually make them garlicky, instead. Serve this with a salad and bread. Yum!

We love Shepard's pie...but for a healthier twist we use sweet potatoes. I make them mashed then layer in.

Hey lets start this thread back up again. Mmmm sweet potatoes! That sounds good I just got about 20lbs the other day for 33 cents a lb
Tonight we will have sweet potatoes ( baked until the juices run out black and sticky, thats when the sugars come out, we eat these just peeled out of the skin with nothing added, they are so sweet and good. ), corn and green bean casserole, and meat loaf.

We are having chicken fajitas. I marinaded the chicken in a cilantro marinade. It's a new recipe so we'll see how it turns out!
