My all time favorite sweet potato recipe is for Sweet Potato Pie. I had a professional chef tell me that it was the best he had ever tasted. The recipe is plain, no cinnamon or nutmeg...it let's the natural flavor shine! Here it is....
Sweet Potato Pie
2 large sweet potatoes (baked and cooled) 2/3 cup sugar 4 tablespoons butter at room temp. 2 eggs 1 teaspoon vanilla 1 teaspoon baking powder 1/3 cup milk 1 (9inch) pie crust
Preheat oven to 350 degrees. Peel potatoes and mash them completely in a large bowl. Add sugar, butter, eggs, vanilla and baking powder, mix thoroughly. Stir in milk. Pour into pie crust. Bake 40 to 50 minutes. Let pie cool at room temp. before serving.

I just sat down to ask you ladies (and brothers too) if you could share your favorite sweet potato dish (or Yams). We are hosting our Thanksgiving family dinner this year. My DH asked if I would make a sweet potato dish. So here I am asking for HEELLLPPPP.
Do you leave yours whole? Do you mash them? I remember something growing up that had marshmellow on the top. Would pecans be better. Any info is welcomed.

My DH's favorite recipe:
Sweet Potato Crunch
6 cups mashed sweet potatoes (about 5 lbs) 2 cups sugar 1 tsp. salt 4 eggs, well beaten 1 stick margarine, softened 1 cup evaporated milk (not sweetened condensed) 1 tsp. vanilla extract
1 cup brown sugar 1/3 cup flour 2 cups chopped pecans 1/3 cup margarine
Mix potatoes, sugar, salt, eggs, margarine milk, and vanilla.
Mix together brown sugar, flour, pecans, and margarine and sprinkle over potatoes. Bake at 350 degrees for 35 to 40 minutes.

Here's mineForgive me no measurements here. But i bake some sweet tators.
Then cut them in half and scoop all the potato in a bowl with butter. Then i add a little sugar and cinnamon. 1-2eggs Then some crushed pineapple. then evaporated milk.
Mix well and put in a buttered casserole dish.
Then i make a streusel topping with butter, flour, brown sugar, cinnamon, and pecans and throw on top.
Bake about 30 minutes more.
My family loves this and it beats candied yams.
Honestly though, I think it tastes more like a dessert than it does a side dish.
How much you use of the ingredients depends on how many tators you make. Therefore no measurements here cause i always have to make lots of this.
