Here is my favorite cranberry recipe that I make every year for our Thanksgiving meal. We use this instead of the jellied kind that comes out of the can.
Cranberry Relish
2 cups cranberries (ground in a food processor) 2 cups sugar 2 small packages lemon jello 1 1/2 cups hot water 2 cups pineapple juice 1 cup finely chopped pecans 2 cups finely chopped apples (about 3 medium apples)
Combine cranberries and sugar, mix well and set aside. Dissolve jello in hot water, add pineapple juice. Chill until almost set. Add remaining ingredients, stirring well. Chill until set.
