My friend Ruth invited us to their home for supper the other night and served this grilled salmon and it was wonderful. Thought I would share.
Grilled Salmon
1 pound salmon filets, fully thawed 8 tablespoons honey 3 tablespoons soy 3 tablespoons ginger root, grated 8 tablespoons olive oil 3 tablespoons mustard 3 tablespoons chopped chives 3 tablespoons lemon juice 4 tablespoons unsalted butter
Mix first five ingredients in shallow bowl. Add salmon fillets and turn several times to coat well. Transfer salmon and mixed ingredients to a plastic bag. Make sure you squeeze the air out of the bag before you seal it. Marinate for a 1/2 hour. Remove from bag. Grill 3 minutes on each side. Remove to plate. In a saucepan melt butter on high heat. Add lemon juice and chives. Pour over cooked salmon and serve.
