Penny's Asian Stove Top Casserole (for lack of a real name)
4 boneless skinless chicken breasts cut into bite sized pieces Use any leftover beef or pork about 1 cup or so...if you have it 1 8oz package of sliced mushrooms 1 onion sliced 1 cup each of assorted fresh or frozen veggies: I used broccoli, red bell pepper, peas (which I loathe), carrots and celery 1 6 oz bottle of Plum Sauce (found in the Asian cooking aisle) Cooking Oil
First cut up meats and stir fry til done, add the mushrooms and onion and let this cook down a bit...next add the rest of the veggies and the plum sauce, it needs to either be covered for about 5 minutes of just open cook it and stir it frequently, as plum sauce can scorch.
I served mine with some asian noodles, but you can even cook up a package of Top Ramen, just hold the seasoning...or rice...

Mmmm! Plum Sauce that sounds good. I'm going to have to look for that and try your yummy recipe.
Mushrooms are yucky to me. But I'll eat them. Bro Ben loves Mushrooms and fishy fish...yucky. I have tried kippered snacks, there ok. But sardines are yuck.
I try to get him things he likes, he takes the fishy fish to work.
Bro Ben loves stir fry. I know we will like this dish, I've never tried the Chinese noodles...the crunchy kind or the cooked kind?
We eat alot of rice around here.

I make a sauce to thicken in the wok after my stir fry is done.
Water
Corn Starch
Brown Sugar
Ginger
Soy Sauce
Whisk together and pour over veggies when done it will thicken pretty quick, I'm not sure the quantities. It's approx 4 cups of liquid when done. Maybe 3 cups water, and 1 cup soy sauce, maybe 1/2 cup cornstarch, 2 tsp ginger, and about 1/2 cup brown sugar. You'll have to play with it to get it right. My Stir Fry... Boneless Skinless Chicken onion green or yellow bell pepper (opt) carrots broccoli cauliflower sometimes, green beans sometimes, water chestnuts Enjoy!Love, ~ sister Darlene ~

Sister Darlene, I use Top Ramen noodles in a pinch, but Jeffrey likes rice mainly, this recipe used yakasoba noodles, you can find those in the refrigerated section on the grocery store...OR..make your homemade noodles and slice them very thin and precook in boiling water til they are just tender, not squishy...stir fry those in w/the chicken and veggies...
