Speaking of apple cider vinegar, I haven't been able to find a source of raw ACV here. In the past, I've brought down a gallon jug of Bragg's ACV from the U.S., and we are just about down to the last cup or two. ...So, I need to learn how to make vinegar. Any of you ladies know how? Should I save this last bit I have, and use it as a starter?

I think my vinegar project is getting off the ground now. I am so excited! I found a woman in town who makes vinegar, and I plan to go visit her soon. She wants to show me the "mother" (which is basically a living mass of "friendly" bacteria and... um.... worms. Explain later.) She says she got this mother from her grandma, and she thinks it must be as much as 80 yrs old. She feeds it and adds water each week, and it continues to produce vinegar.
I know this all sounds gross, but this stuff is really good for you!
She's going to cut me off a piece so I can put it in my little bucket of apple cider. I will keep y'all updated, and will also post soon about the health benefits of raw natural vinegar.

My wife has tried to make vinegar with the mother a number of times , but for some reason it has never worked out. I do hope you have much better luck at it. Have let us know how it works out.

I went to Bernarda's house this afternoon before church. She showed me her vinegar -- her's is in a big 10-gallon bucket! And I wouldn't doubt for a minute that her vinegar mother is 80 yrs old. It's probably a vinegar great-grand-mother. ;D
Anyhow, she gave me a piece of it and instructed me how to keep it alive. She feeds hers by adding water each week and a chunk of panela, which is raw cane sugar. I want to make apple cider vinegar, so rather than feed it with panela, the juice should be sufficient. I think the mother she gave me will work just fine in my apple cider.
She said my fresh juice should be vinegar in about a week, then I can draw it out, or just leave it until it's needed. If I draw out the vinegar, she said to rinse out the mother with cold water, and start another batch like that.
...So, here goes!
