I sometimes go to the website below. It has really tasty recipes at a very low cost and though some may sound weird they turn out delicious. I personally use raw sugar instead of white though and they still taste just right. They also have a menu of how to feed a family on $45.oo a week. It also has the shopping list to go with it and what preparations are required. www.hillbillyhousewife.comI though I would add, since it's just me and my DH I sometimes only make one pizza crust and bake the remainder in a loaf pan for us to have bread later.

Thanks, Sis Kristie! LOTS of good reading on that site! Sis Darlene, it is so good to "see" you again! Missed ya! Egg-a-ma-bobs, that's cute I have never made pan dulce myself. BlackBean Brownies –
1 15 oz. can black beans (drained & rinsed) 1 cup eggbeaters (or 4 eggs) 1 cup Splenda or Stevia 1 teaspoon baking powder 1 teaspoon Vanilla 2 Tablespoons oil 3 Tablespoon baking cocoa
Optional: 1/2 tsp. instant coffee (enhances the flavor of chocolate)
Mix all in a blender or food processor. Put 1/2 the beans in first, then all the dry ingredients. Top with the remaining beans, the oil, vanilla and eggs. Blend on a low to medium speed until smooth, scraping the sides once with a spatula if needed, and pour into an 8x8" glass pan sprayed with Pam. (If you use a metal pan, reduce the temperature to 325.) Bake at 350 degrees for 30-40 minutes. Let cool at least 15 minutes before cutting. Refrigerate any leftovers.
These are great warm, but also good chilled as a snack.
If you don't eat them all then refrigerate them. Also, if they come out dry we use some natural Peanut butter as an icing on top. YUMM.
I have lots of wheat free/gluten free recipies if any of you are interested I can post them in another thread for recipies. Just let me know.

Another good filler is grits. I'm not just saying this because I'm from Georgia either. It makes you feel full for a long time and you can throw lots of different leftovers in grits. If your short on eggs, just scramble them up mix into grits, they'll get full on grits and the small amount of eggs won't matter none.

Dear Sister Nancy, Do you happen to have Celiac Disease? Reading your posts here about your diet made me wonder. My dad found out about a year and a half ago that he has it, and his brother (my uncle) found out last year that he has it, too.

Sister Brenda: my dr. said yes but we think I had false neg test results. I have all the symptoms though. and with no ins. they did not do the invasive test. either way I have tested positive to an allergy to wheat. So has my daughter. So we eat wheat and gluten free! I found out when I went to a whole grain diet. LOL whole wheat is a lot stronger then white flour if you are allergic. If you need any recipies just ask. I can email them to you. lots of muffin,bread, rolls etc. all wheat free/gluten free...it's expensive though to buy the right stuff. ALSO, YOU CAN GET BROWN RICE PASTA..it taste just like the real deal. Tinkyada is the brand name you want.

Sister Nancy, My parents spend a fortune on gluten-free foods! I can really understand now why you didn't have anything to feed your guest. Do you feed all of your family gluten-free, or do two separate menus? I've tried eating gluten-free a couple of times, too. I have been having a lot of trouble with stomach aches and such, been struggling with low energy (probably from iron deficiency,) have very thin hair, etc., but the gluten-free diet didn't really make me feel that much better other than less bloating (which it would for anyone,) so I'm not sure if that is the problem or not. We lost our insurance a few months after my Dad found out about his Celiac or I would probably get tested. Ugh.

Sister Brenda, I am highly anemic so much so that they wanted to give me iron injections. I can't take iron pills due to stomach problems. But, I have started taking a B complex for energy. I feel much better without the wheat/gluten. I can gain 6lbs overnight if I eat pasta or bread. yes, on the cost of other flours/foods etc. I basically just stick to lofat protiens, non starchy veggies, fruit and salad stuff. I do take dairy but I make it lo fat dairy. my menu's are very limited but God knows what we need etc. Yes, I feed the whole family the same. I can not afford to buy seperate meals for everyone. However, my husband does eat bread etc when he is elsewhere. I also buy him potato rolls because I think he might die if he didn't get them. LOL J/K. but as far as pasta and cookies and cakes and such they eat what I eat unless they are out somewhere. I will maybe every two months or so buy brown rice flour and make sweetpotato pancakes w/flaxseed. Yumm! also, I wanted to tell everyone that does not already know there is an organization where you can get a whole order of food for $30.00 it is called.. Angel food ministries...there is no qualifying and is run thru non profit groups mostly churches. IT IS NOT WHEAT/GLUTEN FREE but I share a box with friends. Sister Brenda, my husband only makes enough to cover our rent and our utilities..we can barely squeak out enough gas for his transportation back and forth to work which is an hour each way. So, our own food is limited too. I often think of the widow and son who only had enough for one cake and she was going to make it then die. She fed Elijah first and God provided so that her oil and flower never ran out. I try really hard to do that. but that particular day I was just not able to. Because I am so use to being the one to entertain all the time I felt really guilty when I don't share.

sorry for another post so soon. but Sister Brenda, Make sure your parents know about the hidden wheat in products.
some corn products have wheat in them too..like bugles, doritos etc. ALSO SOY SAUCE. The only brand we found w/out wheat is shop rite brand. If you have a shop rite near you. We no longer have a shop rite to shop at.
