The Vitamin C works as a preservative, so it can help your bread last longer, but there's really no replacement for the preservatives used it commercial bread When I bake a batch of bread, I put all but one loaf into the freezer as soon as it has cooled, and if that loaf is still around after 2-3 days, I will put it in the refrigerator.
