I love to eat, therefore I love to cook! ;D I think most of us on this site have some really great recipes. Can we share? I will start by giving my recipe for Lasagne. It is one of my family's favorites and I fix it every time the family comes to visit. Here it is...
Mama C's Lasagna
Cook 8oz. lasagna noodles. Drain. Brown 1lb. ground burger and 1lb. sausage (I prefer Jimmy Dean) along with 1 diced onion. Drain if needed. To the drained meat add 3 cups spaghetti sauce (like Prego), 1 can diced mushrooms, 2 cloves garlic (finely diced), salt, pepper, and oregano to your taste preference. In a separate bowl combine 2 cups small curd cottage cheese, 1 can of drained spinach, and 1 egg. In a 13"x9" pan make 2 layers each of noodles, meat sauce, and cottage cheese mixture. Then cover this with 2 cups shredded mozzarella cheese. Bake at 350 degrees for 30 minutes or until the cheese has a nice golden color.
Hope your family enjoys this as well as mine. I serve it with salad and garlic-butter French bread.
Now for dessert...
No dinner meal is complete around our home without dessert!
Here is one our favorites...
Peanut Butter Cream Pie
Heat 2 cups whole milk with 3 cups sugar and 12 tablespoons (yep 12!) of cornstarch together until bubbly (careful not to scorch the milk!). Add 2 cups milk mixed with 12 egg yolks to the heated milk mixture. Cook until thickened. Remove from heat and add 1/2 cup peanut butter. (instead of peanut butter you can make it a coconut pie by adding 1 cup coconut, or make it a chocolate pie by adding 6 Tbsp. cocoa plus 2 more cups sugar, or make it a butterscotch pie by using brown sugar instead of white and add none of the flavorings.) This may sound like a lot, but it makes 2 big 9" pies! Top the pies with meringue. Here's the recipe for Meringue:
Beat until thick 4 egg whites, then add while mixer is going 1/2 tsp. cream of tartar, 1/2 cup sugar and 2 tsp. vanilla. You will have to do this recipe twice for 2 pies. I have a wonderful Kitchen Aid mixer but it will only handle one recipe of this at a time in order to have nice fluffy meringue.
