We love homemade pizza, we buy 5lb of pepperonis from Sam's Club and divide them up and freeze them, and there ready for Pizza anytime.
We also like making French Bread Pizzas, Cut a loaf of French Bread length wise and spread on pizza sauce and fixings, Bake 400' until done...This is quick and easy. ~ sister Darlene ~Cast Iron Skillet Pizza (This makes 2- 12'' skillet Pizzas)Preheat oven to 400. 1 cup warm water ( I make it warm but not hot around 120' ) 4 1/2 tsp ( 1 1/2 Tb ) active dry yeast 3 Tb olive oil 2 tsp raw sugar 1 tsp. salt 3 cups flour, plus extra for handling In a Mixer add warm water, yeast , olive oil ,raw sugar let dissolve. Add flour and salt together, add 1 cup at a time until it can be handled, not too sticky. Let knead in mixer for 5 min, then let rise 15 min, then knead again, take out, divide dough in two pieces, place on table roll into 2 circles. Rub lard on your skillets. Place in skillets press up the sides. Put on pizza sauce ( we make our own by adding... 1 can tomato sauce a little garlic powder, equal amounts of basil and oregano let simmer until thick enough to spread on pizza crust.) and then cheese of your choice, fresh veggies (your choice), cooked meat Bake at 400 for 15 minutes or until done. Enjoy!

We make our own pizza sauce too, but ours sure is different than yours.. (I will have to try your recipe sometime too!) I use, tomato sauce, tomato paste, garlic powder, ground oregano and paprika. I mix it all together (cold) and then store in the fridge in a sealed container until I need to use it.
We love home made pizza too, and I always keep pepperoni on hand as well as shredded cheese, mushrooms and sausage, already cooked, in gallon freezer bags. We can just take the bag from the freezer, crumble out what we need on top of our pizza crust and place it right back in the freezer for next time. If I keep all the needed ingredients at the ready, pizza becomes our "fast food" when we need a quick easy meal. We often buy pizza crusts from a family near here who sells them at our local flea market. They are really tasty and freeze easily, so you can buy them ahead. However, like everything else, they are becoming expensive. Now we simply make our own.
I love cooking with my cast iron skillets, I will have to try your recipe sometime. Thanks for sharing Darlene!
