Since some of us are finding we have too many apples, I thought I'd throw in one more of our favorite apple recipes! 1/2 cup butter 1/4 cup shortening 1/2 cup sugar 3/4 cup packed brown sugar 2 eggs 1 tsp vanilla 2 cups old fashioned oats 1 tsp cinnamon 1/2 tsp nutmeg 1 tsp baking soda 1 1/2 cups flour 2 medium apples pealed/chopped 1 cup chopped walnuts Preheat oven to 350*F. Ina large bowl beat the butter, shortening, sugar and brown sugar with a mixer on medium thoroughly. Beat in eggs, and vanilla until well blended. Beat in oats, cinnamon, nutmeg, baking soda and flour, scraping side and bottom of bowl once, just until blended. Stir in apples and walnuts. On ungreased cookie sheets, drop by rounded tablespoonfuls about 2 inches apart. Bake 13-17" or until edges are golden brown and centers are set. Let come down to room temperature, then remove from sheets. If desired, you can drizzle with the following glaze: Glaze 2 cups powdered sugar 2 tablespoons butter 1 teaspoon vanilla 1/4 cup of milk or half and half Mix until smooth. Drizzle over cookies as desired. These are also REALLY good right out of the oven!

Do you think these would keep for a couple of weeks in a sealed container in a cool room, I would think they would be a great addition to my Christmas gift baskets. Sister Penny

Penny;
These are a VERY moist & soft cookie! I noticed after I made them, that I actually had to open the edge of the storage container I had them in as they were becoming too soft. The moisture was becoming "trapped" inside the container making the cookies even "wetter". Ours only lasted a week before they were eaten. So I am not really sure how long they would last. I wonder if you could freeze them, maybe drizzle on the icing later when you thaw them out?

I was wondering the same thing! I have come up with a gift idea (maybe that needs to be a thread) To sew little cloth bags and but quick breads or cookies in them, along with fresh grape jam. These cookies sound so delicious, I think I will try to make and freeze them! Thanks
