Hi !
I'm looking for ideas for simple supper recipes. We have our main meal at noon since Jeff comes home for lunch, but I'm stumped to come up with many light cool evening meals.
We like BLT's and pasta salad, but beyond that....I don't know.

We often have wraps with salad-y things, or rice biscuits and carrot sticks and dip.

My MIL likes oriental chicken salad, but I don't have the recipe. You might could find something on allrecipes.com. There's a simple Mexican salad that's good:
1 can kidney beans, 1 can corn, Frito's and dressed with Catalina. Best if refridgerated overnight.
We also make a chicken salad with chicken, apples and pickles , dressed with mayo. This makes great sandwiches as well.

Another thing we often do for summer dinners or lunches is barbeque (very Aussie of us, I know!). That's usually something like sausages on the barbeque, with salad-type stuff (potato salad, lettuce-y stuff, coleslaw). It's usually a fairly light meal I find.

Crock Pot Mac-n-Cheese
8 oz. cooked, drained macaroni 2 Tbl. butter 3 cups of grated cheese (your favorite) 1/2 cup Velveeta 1 egg 2 cups milk Salt and pepper to taste
Grease crock pot with Pam. Mix all ingredients, saving 1 cup of cheese to sprinkle on top. Cook covered on low for 3 hours.

Sis Pam...I thought I recognized you ;D. I make almost this same recipe, but I add a little mustard and don't use Velveeta. I bake it in the oven. I don't have a crock pot and am trying to limit my use of electrical gadgets.
Our grill is wood fired so we don't use it much in the summer time, it's much better in the spring and fall when it's chillier out.

I know this is an old thread, but I recently tried a new recipe that was really good! Italian Rice Salad (Click the link for the recipe, it is from a blog I found, the Nourishing Gourmet). It can be eaten warm or cold and is so good! It would be good as a summer supper with leftover chicken in it, or served with fruit on the side.
