3/4 cup lentils 3 cups water or stock 1 tsp. (or Braggs) 3 Tbsp. oil 1 med. onion 1 1/2 cups mushrooms (I used green beans instead) 3/4 cup. bulgur
Combine lentils and water and cook until tender. Add salt and set aside. Saute onion, mushrooms, and bulgur in oil for 5 minutes, then combine with lentils. Place in buttered casserole. Cover, then bake at 350 for 20 minutes.
This is supposed to be a side dish, but I made it for our lunch today. A single recipe served our family of 4 (2 small children) nicely with some leftovers. Very tasty!
