This is a must try Muffin Recipe! You will be missing out if you do not try this excellent recipe. We are all the time making muffins around here, this one is a winner and all time favorite in the Smith house hold.
Please feel free to share your muffin recipes here, we love trying new muffins out. There all good but this one is a 5 star one. I think you will like it a bunch. Let me know if you try them and how you like them.
Scrumptious Orange Muffins
2 1/2 c all purpose flour
2 tsp salt
1 Tb baking soda
1 1/2 c sugar
1 1/2 ( one container) frozen orange juice concentrate
2 1/2 c water
4 eggs
6 Tb oil (corn oil)
9 c Bran Flakes Cereal ( you could use Raisin Bran and have raisins in the muffins)
Combine first 4 ingredients and set aside.
In a separate bowl mix the rest of the ingredients.
Add dry mixture to wet, gradually mix until moistened.
Fill muffin tins 3/4 full, this makes alot of really good muffins, they can be shared with friends or frozen.
Bake 375' for 20 to 25 min or until golden and done.
Enjoy!
We have no problem eating every last one around here with 9 mouths to feed.
Though we did share 2 yesterday with two people who were out in front of our house on the hwy struggling to put a queen size mattress back on their truck bed that had blown off in the high winds we were having yesterday. We gave them our close line to tie it down and two muffins. It was a man and his mother in law, she had on a dress and socks and sneakers, she looked so nice. Some of the hill people around here still wear dresses because thats the way they were brought up to do. She was a nice lady. I hope she rested well on that new mattress last night.
