Yogurt-Muesli Ambrosia
This is a special recipe that we made when a certain special family was visiting at our house not so long ago. It seemed to go over really well, and when we have had it of late I have thought with joy over how God loves us and meets with us to bless us even in our most troubling times.
First, you must make muesli.
Take:
10 C quick oats 2 C sliced almonds (or your favorite nut, be we like the delicate crispness of these) 1 C sweetened shredded coconut 1 1/2 C packed brown sugar---more or less, to taste
Then, take the canned/fresh fruit of your choice, and open/chop them into a bowl, draining the juice off. I like to use a mesh bowl to drain it easily. I believe I used the Dole Tropical Fruit Blend, and fresh bananas.
Now, add Vanilla Yogurt till it covers it pretty well, and then about a cup of muesli. This recipe is one that is made up and so you can have the joy of experimenting to get it just to suit your family's taste.
We also like the muesli in a bowl with milk (the children want to throw in a couple of choc. chips, and microwave it for a bit, just for special, sometimes).

Almond Raisin Granola
Nonstick vegetable oil spray 3 cups old-fashioned oats 1 cup slivered almonds 3/4 cup shredded sweetened coconut 1/3 cup sesame seeds 6 tablespoon pure maple syrup 6 tablespoon dark brown sugar (packed) 1/4 cup canola oil 2 tablespoon warm water 1/2 teaspoon salt 1 cup golden raisins
Preheat oven to 250 degrees F. Lightly spray a baking sheet with sides with nonstick spray.
Toss oats and next 3 ingredients in large bowl.
Whisk syrup, brown sugar, oil, 2 tablespoon warm water and salt in small bowl to blend. Pour syrup mixture over oat mixture and stir to combine.
Pour into prepared baking pan and bake until evenly browned, stirring occasionally, about 1 hour 15 minutes. Cool and transfer to a large bowl and mix in raisins. Will last up to 1 week in an airtight container.
Granola
3/4 cup of brown sugar 1/3 cup of vegetable oil ( or olive oil) 1/3 cup of honey 5 cups of oats 1/2 cup of raisins 1/2 cup of dry milk 3/4 teaspoon cinnamon pinch of salt mix brown sugar, oil and honey in saucepan. heat until the sugar is disolved. Combine dry ingredients in a large cake pan. Pour sugar mixture over dry mixture and mix well. Bake at 375 for 10minutes.. Let cool in pan.. Now put your raisians in.. Store in airtight container.. You can add muts, wheat germ, to this...
This is very good. We love to have it. And it makes a great snack...
Granolla
6 c oats
1/2 c wheat germ
1 tsp vanilla
1/4 c Cocoa
1 c brown sugar
3/4 c butter
1/4 cup oil
1/2 c peanutbutter
1 Tb cinnamon
Mix dry ingrediens melt butter and peanutbutter, mix all wet ingredients with all dry ingredients, spread on cookie sheet, Bake 250 for 1 hour stirring every 20 min. This is verry good!
Goat Cheese and Apple Omelet
3 tablespoons butter 4 ounces goat cheese (1 log, I'm guessing the weight) 1/2 granny smith apples, peeled and diced 1/4 " thick 1 pinch sugar 2 large eggs 1 tablespoon milk (I use skim) 1 pinch black pepper
1. Melt half of the butter in a small nonstick saucepan, add apple and cook till apple starts to brown, then add sugar and stir till nicely brown. 2. Beat eggs and milk together till incorporated, don't overbeat. 3. Heat remaining butter in a small nonstick pan over high heat, when butter starts to foam, add egg mixture and reducce heat to medium low. 4. When egg sets a little bit, add goat cheese on one half, arrange apple on top of cheese. 5. Fold the omelet in half, slide onto a plate (preferably warm) and serve immediately.
Rose Galletta's Ricotta Pie
1 1/2 pounds ricotta cheese 6 eggs, separated 1/2 cup white sugar 1/4 teaspoon lemon juice 1/4 teaspoon lemon zest 1/2 teaspoon vanilla extract 2 cups all-purpose flour 6 tablespoons white sugar 1 teaspoon baking powder 1/8 teaspoon salt 1/2 cup butter 1/4 cup milk 1 egg 2 tablespoons lemon zest
To Make Shell: Combine the flour, 6 tablespoons white sugar, baking powder, salt and lemon zest. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk and the 1 whole egg. Work dough until it forms a ball. Do not knead or over work the dough. Generously flour a work surface and roll dough out to fit into a 9 inch pie plate. Place dough in a greased pie plate. Poke holes in the center with the tines of a fork. Do not prebake. Preheat oven to 350 degrees F (175 degrees C). Beat ricotta, yolks, and sugar until lemon colored. Add lemon juice, zest, and vanilla. Beat whites until stiff, fold into lemon mixture. Pour mixture into the prepared shell. Do not over fill the shell, it rises slightly when baking. Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes. Let pie cool then refrigerate to set, the pie will become creamy and dense. Serve cold.

Apple-Walnut Pancakes Combine: 1 cup whole wheat flour 1 cup unbleached white flour 1 teas. salt 2 teas. baking powder 1 Table. brown sugar Combine in another bowl: 2 cups milk 2 eggs, beaten 2 Table oil Add liquids to dry ingredients and stir until just mixed. Then add: 1 cup diced apple 1/2 chopped walnuts
Cook on moderately hot, lightly greased griddle. Serve with butter and homemade maple syrup, another cheap recipe.

Granola bars:
4 cups oats (any type will work)
1 cup packed brown sugar
1 tsp. salt
opt. one handful chopped walnuts or favorite nut opt. one handful shredded coconut...I don't usually use this opt. one handful favorite dry fruit , or choco chip mini etc.
mix it and bag it ...I will do about 4 bags
To Use:
1 bag Mix
1 cup melted butter
1 cup favorite jelly or jam (strawberry, grape, blackberry, orange marmalade goes great with dried cranberries, ETC) (note: you can use honey or syrup instead of jelly or jam )
I also found that if you melt the butter and the jelly in the same pan, they mix together very quickly.
Now mix this all together...Press into a 15 x 10 (or two smaller pans) must be greased...bake for 15-20 min. at 375 degrees or until golden brown... IMPPORTANT: Cut quickly into bars and take immediately out of pan and transfer to a plate to completely cool...the bars will be very fragile so you might have to help them along and form them a bit...as they cool they will stay together ...once totaly cool I individually wrap in plastic wrap and then freeze whatever I will not be eating...just take out of freezer and eat as wanted...these are VERY yummy!!!!
comments on granola bar results...
The bars were delicious!!!!!!! My only problem was they were too soft to hold their shape, not that I expected them to be hard like storebought bars, but we had to eat them by pulling off a bite size piece. What do you think I did wrong?..........
I'm not sure the lady said...the bars will be very fragile so you might have to help them along and form them a bit...as they cool they will stay together I was courious about that statement. Maybe try adding more ( just a little ) oats. The recipe has 2 cups of wet to aprox 5 cups of dry (sugar is not too binding) make that 4 cups dry. Maybe thats the problem.
Oh well they sure sounded good, Maybe you could spread this mixture on a cookie sheet and bake on low until dry, then eat as cereal, or sprinkle on ice cream, or make trail mix or something
Another Granola Bar Recipe
1 cup honey, warmed 2/3 cup smooth peanut butter 2 2/3 cups rolled oats 1 cup whole wheat flour 1 tsp cinnamon 1/2 tsp cloves (optional) 1/2 tsp nutmeg 1/3 cup wheat germ 2 cups of mix in's.( coconut, raisins, chocolate chips, unsalted peanuts, mini M&M's, any finely chopped fruit) your choices
Method: Mix honey and peanut butter til well blended. Sift oats, flour wheat germ and mix-in's. If this seems too dry add water, 1 Tablespoon at a time. If too stick, add oats 1 Tbsp at a time..Mix should be slightly sticky but still press easily into a pan with greased fingers. Press into a 9X13 lightly greased pan.
Bake at 350 degrees until barely browned. DO NOT OVERBAKE! cut while warm into desired bar sizes. When completely cooled, remove from pan and wrap separately in plastic wrap. Save the crumbs for ice cream toppings This makes about 2 dozen bars.
This is not an "exact" recipe, If you use the old fashioned oats, you will need more moisteners, If you use chocolate chips they melt and hold things together better. Dried fruits, like apples and raisins tend to do better if you plump them up a little before adding to mix, just soak them in a little boiling water, or else they turn into little rocks.

Has anyone heard of coffee and biscuits together?
Soakies!
My husband would have this growing up.
What you do is take a homemade biscuit (canned biscuits to not work).
Put butter and "lots" of sugar on the biscuits.
Pour a little milk over the biscuit also...then pour the coffee and stir a bit.
(You probably will want to use a bowl).

A hashbrown cassarole... made of diced potatoes , sour cream,cream of chicken soup, grated mild cheddar cheese, diced onions (can use green onions ), salt and pepper to taste. This is so yummy!
A breakfast cassarole...3 cups cubed wheat bread, 3 cups cubed ham, sausage (or your choice of meat), 3 cups shreaded cheddar cheese ( I use mild), 1 Tb flour, 1 tsp dry mustard, 2 Tb melted butter, 6 eggs (beaten), 3 cups milk......Place first 3 ingredients in a 9x 13 pan. Combine flour, and mustard sprinkle over bread mixture, Beat eggs, milk, and butter, Pour over top. Refridgerate for at least 8 hours or over night. Bake uncovered on 350 for 1 hour.....Enjoy!
Egg cassarole...12 eggs, 1lb sausage (cooked), 1 can cream of mushroom soup, 1 lb cheese grated, Layer in a 9x13 pan( in order given ), Refridgerate over night, Bake at 350 for 30 min or until done...Yummy!
Breakfast Burger Bun sandwiches...1 lb hamburger, 1 lb sausage, 1 lb Velveeta cheese, 1 tsp. Oregano...Brown hamburger and sausage meat, drain then add Velveeta and Oregano, Heat until cheese melts, Serve on Hamburger Buns, (or warm toast or English Muffins)

Sausage Making! by Beverly
We bought a meat grinder yesterday as we wanted to try to make our own breakfast sausage. Pork is not common down, but we discovered one of the butchers had some pork for sale. So, we brought home a shoulder.
We froze 6 pounds of sausage and I rendered a few half pints of lard.
I felt so "homesteady" in the kitchen today. It will be a treat to have some fresh biscuits with sausage gravy.
Here is my seasoning recipe. It's one I got off the internet, but we like the flavors really well. Jeff said he would like it a little hotter, but this is the guy who puts Tabasco on everything.
Breakfast sausage
2 pounds ground pork 2 teas. dried sage 2 teas. salt 1 teas. black pepper 1/4 teas. dried marjoram 1 Tablespoon brown sugar 1/8 teas. crushed red pepper flakes 1 pinch ground cloves
Mix all together. For best flavor, let rest overnight in the frig and cook the next morning for breakfast.
Bro Ben cannot eat pork it causes his arthritis to act up. He swells and has pain. So I started making Beef sausage with ground beef! It turns out really good! I made up this recipe and tweaked it until it was to our taste. It is not pork but it is really good.
Homemade Beef Sausage ( this is added to taste!)
Ground beef
equal amounts of:
ground Sage
ground onion powder
ground mustard
salt
pepper
ground thyme
ground rosemary
less amounts of:
ground Red Pepper
crushed Red Pepper
Nutmeg
Place ground beef in a lg bowl and add seasonings mix well.
Mash into 4 inch flat round patties on cookie sheet
Freeze
Take out of freezer when frozen then put into a lg freezer bag
Take out what you need and cook in a cast iron skillet ( they do not have to be thawed, they will thaw while cooking)
I think they taste better when they have sat in the freezer a few days....the seasonings have a chance to penetrate the meat.

note: this can be done with any ground meat....make sure to add oil to dryer meats

Frittata is an Italian omelet with cheese, meat or vegetables mixed into the eggs rather than folded inside the eggs. This omelet makes for a special breakfast or an easy supper.
Spinach Frittata
1 teaspoon olive oil 1 garlic clove, minced 3 cups baby spinach leaves 3 whole eggs, plus 4 egg whites 3/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/2 yellow onion, chopped 1/4 cup minced red bell pepper 2 waxy red or white potatoes, about 3/4 pound total weight, peeled and shredded 2 tablespoons chopped fresh basil 1/4 cup shredded part-skim mozzarella or provolone cheese
Preheat the broiler.
Position the rack 4 inches from the heat source.
In a large, nonstick frying pan with a flameproof handle, heat 1/2 teaspoon of the olive oil over medium heat.
Add the garlic and saute until softened, about 1 minute.
Stir in the spinach and cook until it wilts, 1 to 2 minutes.
Transfer to a bowl.
Set the frying pan aside.
In a bowl, whisk together the whole eggs and egg whites.
Stir in 1/4 teaspoon of the salt and the pepper.
Set aside.
Return the frying pan to medium heat and heat the remaining 1/2 teaspoon olive oil.
Add the onion and saute until soft and translucent, about 4 minutes.
Stir in the remaining 1/2 teaspoon salt, the bell pepper and the potatoes and cook until the potatoes begin to brown but are still tender-crisp, 4 to 5 minutes.
Spread the potatoes in an even layer in the pan.
Spread the spinach evenly over the potatoes.
Sprinkle with the basil.
Pour in the beaten eggs and sprinkle evenly with the cheese.
Cook until slightly set, about 2 to 3 minutes.
Carefully place the pan under the broiler and broil until the frittata is brown and puffy and completely set, about 3 minutes.
Gently slide onto a warmed serving platter and cut into wedges.
Serve immediately.

Healthy Breakfast Ideas!
Here are some healthy breakfast ideas the whole family will enjoy.
Smoothies - Smoothies are certainly a great way to get a good dose of fruit. Chop up some fresh fruit, throw it in the blender and you have a healthy and delicious breakfast. For a heartier breakfast smoothie add some yogurt or a little high-fiber cereal.
Breakfast Muffins - For breakfast try a savory or fruit muffin. For a healthier muffin use whole wheat flour and instead of sugar mash a ripe banana or a little honey into the mixture. Unless you’re an early riser you probably won’t have enough time to make muffins in the morning. Simply make them ahead and either freeze or keep in an air-tight container for a few days.
Wholesome Eggs - Eggs are very versatile and most kids enjoy them. Try a ham omelet with a little cheese or scrambled eggs with chopped tomatoes. Try a prepare-ahead breakfast casserole for a hearty family breakfast.
Don't Forget the Oatmeal - Making your own oatmeal is much healthier than the instant packets. Cook up according to packet instructions and add a little fruit or honey.
Healthy Breakfast Bar - Make up a batch of healthy breakfast bars the day before and use them for a quick, on-the-go breakfast. Use a low-sugar recipe and include lots of healthy dried fruits.
Fantastic Fruit Salad - Serve a chopped fruit salad with a yogurt dip. Mini muffins are delicious dipped in yogurt too.
Breakfast Burrito - Scramble some eggs and place them in a tortilla with chopped tomatoes, a little grated cheese, ham or other favorite toppings… roll up and enjoy a yummy breakfast burrito.
Spruce up your Toast - Try whole wheat bread and serve with peanut butter and sliced bananas, cream cheese and raisins (sprinkle a little cinnamon on top), or cream cheese and a fruit jam (pure, no-sugar added jam is best).
Pizza for Breakfast - Split a couple of English muffins in half, top with a little pizza sauce, grated cheese and some chopped ham or even eggs. Place under the grill for a few minutes and you have a nutritious breakfast pizza. You can make bagel pizzas too.
Orange Ambrosia is so good and good for you. It's so easy to make a big batch and let everyone take out what they want, for breakfast, snack, dessert...whatever.
There are no measurements, just adjust to your taste.

A couple recipes to make oatmeal a real substancial meal.
Hot Apple Oatmeal
4 cups milk 1/2 cup brown sugar 2 T. butter 1/2 t. salt 1/2 t. cinnamon 2 cups rolled oats, old fashioned kind 2 cups chopped apple 1 cup raisins
Combine milk, brown sugar, butter, salt and cinnamon in an ovenproof pot. Bring to a boil. Remove from heat and stir in oats, apple and raisins. Bring mix to a simmer. Put pot in 350 oven, uncovered, and make 30 minutes.
Crockpot Oatmeal
2 cups milk 1/4c. brown sugar 1 T. melted butter 1/4t. salt 1/2 t. cinnamon 1 cup rolled oats 1 cup chopped apple 1/2 cup raisins 1/2 cup chopped walnuts
Grease inside of crock pot. Mix all together with a wire whisk. Cover just before going to bed and turn on low. This is wonderful for a Saturday night and you'll have hot oatmeal for Sunday morning with no fuss!!

Rice cereal! When we have left over brown rice (or when I make enough for left-overs!), we make rice cereal. Heat the rice with some milk (we like cashew milk), cinnamon, cloves, nutmeg, ginger, cardamom, a bit of vanilla, shredded coconut, raisins, chopped apricots, chopped walnuts or almonds, or whatever else you have on hand. Add sweetener like dates, mashed bananas, date sugar, honey, etc. YUM! We like this best with short grain brown rice.
Usually we eat all fruit for breakfast. If we eat this, it will be for supper or a snack instead.
