Does anyone know how to make tomato butter preserves? My grandmother and my mother (both deceased) used to make it and it was absolutely delicious on toast. It was thick, very sweet, and had big chunks of tomato in it. For some odd reason, I cannot find the recipe that they used. I thought my mother might have had it in her cookbook but it's not there.
If anyone has a recipe or knows how to make it, could you please email it to me? quiltmaker@sio.midco.net

I found this on the Food Network recipe search website.
Ingredients 5 pounds tomatoes 1 cup vinegar 3 cups sugar 1 small stick cinnamon 1/4 ounce ginger root 1/2 tablespoon whole cloves
How to make Tomato Butter
Peel and slice tomatoes. Add vinegar and sugar. Tie spices in a bag and add. Cook until thick, stirring almost constantly to prevent scorching. Remove spices. Pour into clean hot jars and seal.

Thanks Debbi! I just saw your post today. I had kind of forgotten about the tomato butter since canning season is over. I will have to try this recipe out. It sounds delicious. I have no idea what went into the recipe my grandmother and mom had since I was a kid when they made it. The loss of the recipe is a good example of why it is important that we "preserve" (excuse the pun!) some of the recipes, ideas, and methods of doing things, for our future generations. You just never know when someone in your family will come along and want to know how to do something that we did!
