1 deep dish pie crust 1 cup sugar 2 T. corstarch 2 cups milk 2 T. butter 1/2 cup coconut 1tsp. vanilla 3 eggs separated Meringue 3 egg whites 1/4 cup sugar Beat egg whites until thick. Add sugar a little at a time while beating.. Let peaks form on meringue.. Pour over pie filling sprinkle with coconut.. Directions for filling.. Cook pie crust according to directions. Mix sugar and corstarch. Add egg yolks and rest of ingredients. Cook on high in microwave few minutes at a time. Stir each time, until thick.. Pour into crust.. Bake 8-10 minutes at 350.. This is a very tasty dessert.. Hope yall enjoy it!!
