Here it goes. Please bear with me. I am a covering IFB woman. I know a woman who does this torah observing stuff. She uses the KJV1611, so she tells me. I had asked her questions about why she does this. Please read the following:
Some of your questions are the same ones I asked as well.
1. If we are free from the law, (the death of Christ freed us) then
where is the need to be under the Law again? Yes Yeshua (Jesus) freed us but it's not how most think. What was nailed to the cross was the animal scrafies and doing the law and everything for Salvation that is what was nailed to the cross. Lets look at Matthew 5 17-19

Think not that I am come to destroy the law, or the prophets: I am not come to destroy, but to fulfil. Here in this verse it says he came to fulfill not to distroy the law or the prophets but to fulfill. He didn't come to take away the law but fulfill.
5:18
For verily I say unto you, Till heaven and earth pass, one jot or one tittle shall in no wise pass from the law, till all be fulfilled. Here it says till Heaven and Earth pass away not one jot or one tittle shall pass from the law. So untill Yeshua comes back and this heaven and earth pass it will not be taken away.
5:19
Whosoever therefore shall break one of these least commandments, and shall teach men so, he shall be called the least in the kingdom of heaven: but whosoever shall do and teach them, the same shall be called great in the kingdom of heaven. This is powerful things Yeshua says we are not to break one of these commandments and if we do we will be called least in the kingdom of Heaven. Why would he say this if we weren't to follow the commandments?
From these verses it's very clear to me the law is in action but you don't have to do it for Salvation reasons now.
2. I then am thinkging we have to keep all the law, we can't just
pick and choose between which ones we wish to follow, correct? Correct you can't pick in choose. Either you follow all of what G-d says to or you don't. Now there are some things like are just for men or for women and of course a women can do tha mans and a man can't do the women's. We are to do it to the best of our ability.
3. Does that mean, should we do, and actually follow this torah
obedience, wouldn't we be living like the Jewish people? Yes we would be doing lots of things like them Shabbat, Kosher Biblical Holidays and such.
4. If infact, this does mean we would be living like then, then
where is the 'come out from among them and be ye seperate". That comes from we are to live differently then the Gentiles pagan people. We are to avoid all evil things and such and try and live HOly as G-d is Holy.
I know some of this stuff is so different then churches teach. I had a hard time with that at first but G-d was faithful and showed me. I urge you to read your Bible just as it is written forget all what Pastor's say and such and just read the plain scripture. Someone came me that advice and it helped me. Me and Mike read the Bible and our eyes we're open to many things. I don't believe there is one way for the Jewish people and one for Christians at all. Once we are saved we are in G-d's family we are adopted into the olive vine. We are to follow what G-d has set out for us in his word.
She has done a good job of speaking plain and simply, my concern is this. It goes against what I have always been taught. I want to read the bible and understand it. I am always doing my own studying after the pastor preaches something. I have learned not to have blind faith with a man, only with God/Christ/HolySpirit. Something just doesn't seem right here to me. Please help me to settle this matter within myself.
