To Can Tomatoes
Put washed tomatoes in a large pot of boiling water until skin wrinkles.
Take out of water
Put in a bowl of cold water
Remove skin, and core, cut up as desired ( I usually just cut in 4th)
I add alittle of blanching water to my sliced tomatoes to make more juice for canning the tomatoes.
Put into jars with 1 inch head space.
Add1 tsp salt to each jar (Quart)
Wipe off lids
Place the flat and ring on
Screw tight
Place in a Large Kettle or pot...( I place rings off of unused jars in the bottom of my pot so the jars will not be resting on the bottom of the pot. They could break from the direct heat)
Cover with hot water
Bring to a boil
Process with lid on for 45 min
Take out
Do not remove rings from jars
Place on the table
Leave over night ( to cool and seal)
Next day...Remove rings
Wipe off
With a permanent marker put the year (2006) on jar lid
Store in cool dry place
Enjoy! Fresh tasting Home grown goodness for years to come...or as long as they last We eat ours up pretty fast.
Salsa

Put in a pot
Blend in food processor:
Onions
Bell peppers
Red hot banana peppers
Jalapenos
fresh garlic
Fresh Basil
Wear gloves when cutting seeds out of hot peppers, they will burn your skin.
Put in the pot with tomatoes stir
salt to taste
red pepper flakes
Chipotle seasoning
Cilantro
Cumin
Chili Powder
Simmer in a pot for approx 15 min
Put into jars leaving 1 inch head space.
Wipe off lids
Place the flat and ring on

Place in a Large Kettle or pot...( I place rings off of unused jars in the bottom of my pot so the jars will not be resting on the bottom of the pot. They could break from the direct heat)

How to Can Salsa without Fresh Tomatoes!
Buy all your ingredients in cans from the store and your peppers, onions fresh add your spices..... Make a Big pot! Then can as instructed in post.
Spaghetti sauce to can:
Put washed tomatoes in a large pot of boiling water until skin wrinkles.

Put in food processor blend well
Put into a large pot
Add spaghetti spices of your liking
Simmer for 2 hours or until it thickens
You can add corn starch or tomato paste to thicken.
Put into jars leave 1 inch head space.
Wipe off lids

How to can Spaghetti Sauce without Fresh Tomatoes!
If you wanted to can home made spaghetti sauce and you did not have fresh tomatoes you could go to the store and buy those really big (food service, industrial size) cans of tomato sauce ( I would buy 3 or 4.
Mix in your spaghetti spices ( Oregano, Basil, garlic, Italian seasoning etc.)
simmer then can in Qt jars the same way as fresh.
You could even use meat but you would have to water bath for hours or pressure cook at 10 lb of pressure for 1 1/2 hours. I think? It might be less, but you'd have to check in a recipe book.
