Texas One Dish
1 lb Ground Beef
2 onions, chopped
1 green pepper, chopped
1 cup oats
1 can diced tomatoes
½ cup brown rice
1 tsp chili powder
1 tsp garlic powder
1 tsp cumin
1 tsp salt
pepper to taste
Preheat oven to 350 degrees.
In a large skillet, sauté beef and onions over medium high heat. When onions begin to look translucent, add bell pepper. Continue cooking till beef is browned completely. Drain grease well. Add oats, stirring well. Add remaining ingredients, stirring well to completely mix. Transfer to 2 quart baking dish. Bake for 45 minutes or until rice is tender. I sprinkle some cheddar cheese on it! YUM. Serve with corn bread or nachos...also makes a good tortilla filler! Enjoy.
Making your own granola is very easy! All you need are rolled oats (or other rolled grains), filler such as seeds, coconut flakes, nuts, wheat germ etc, oil, liquid and dried fruit! Here is a recipe Apple Cinnamon Granola.
Mix together in large bowl:
10 cups oats (42oz canister)
1-2 cups coconut
1 cup sliced almonds, (optional)
Add:
1/2 cup virgin coconut oil or olive oil
1 cup honey or sucunat or raw sugar
1 cup apple juice. and blend.
Toast in oven at 250 until light brown, stirring occasionally - this will take several hours.
When cool, add 1 dried apples
Crockpot Granola
5 cups old fashioned oats
1/2 cup oil
1/2 - 3/4 cup honey (or maple syrup) the higher amount of honey, the more "stick-together" the granola will be
1 tsp vanilla
1 tsp cinnamon
1 cup coconut (add now, or you can toast this then add with the raisins and dried fruit later)
Combine well into crockpot, cook on Low for 5 hours. keep lid slightly ajar while cooking and stir often. The more you stir, the more "fine" your granola will be. Once finished, add in raisins, dried fruit, etc.
Homemade Hot Pockets
2 c. warm water
2 pkg yeast
1/4 c sugar
1 1/2 tsp salt
1 egg
1/4 c melted butter/margarine
6 - 6 1/2 c flour
Mix together and knead as you would any dough. Grease bowl well, cover and chill for 2 an hour, give or take. When ready, roll out thin (the more thin, the flakier your crust, though this is still a 'bready' hot pocket) Cut 5 inch squares out. Place 2 Tablespoons of water filling you prefer...taco mix, diced ham and cheese, scrambled eggs and sausage...your choice Fold edges up and pinch together to seal. Place pinched-sides down on greased sheet and allow to rise 15 minutes. Bake at 350 for 20-30 minutes. Can freeze these and microwave for a quick meal or snack.
