This is a yummy side dish that goes excellent with Mexican food. I fixed it today with black beans and rice and it was refreshing and cool, especially after the heat of the beans.
It would also make a nice picnic slaw as there is no mayo to spoil.
Avocado Slaw 1/2 head cabbage, finely chopped 1/2 cup red onion, minced 2 avocados, diced 1 tomato diced juice from 1 1/2 lemons
Mix together and season with salt and pepper. Chill until serving time.
I made 1/2 this recipe for the three of us and we had some left over, so plan accordingly.
Have a great day! Beverly
