"Simple and quick to prepare. Sugar snap peas are quickly fried with green onion and garlic, and tossed with fresh mint leaves. Wonderful use for spring garden vegetables. Serve hot or at room temperature." Original recipe yield: 4 servings.
Sugar Snap Peas with Mint
2 teaspoons olive oil
3/4 pound sugar snap peas, trimmed
3 green onions, chopped
1 clove garlic, chopped
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon chopped fresh mint
Heat oil in a large skillet over medium heat. Add the sugar snap peas, green onion, and garlic. Season with salt and pepper. Stir-fry for 4 minutes, then remove from heat and stir in the mint leaves.

We love garlic too!
Do you have a garlic press? Ben bought me one for around 17.00. Pricier but well worth it. I bought one from Wal Mart for around 7 or 8 dollars and it was cheap! I took it back. My new one came from Bed Bath and Beyond and it does an excellent job! I guess you get what you pay for.
I use mine all the time, I use to just by pre diced in a big plastic jar. I still use that sometimes. It's pretty good too. The fresh is so much stronger than the pre diced in a jar.
My children love to eat the garlic in the jar by the spoonful. Boy, does it make there breath stink! ;D ;D And...they love to eat the wild chives that grow on our land. They are strong too. Both are good for them and I do not mind them eating them.
Garlic and onions are a natural antibiotic! They have all kind of good healthy properties.
Mmmmm Garlic and onions, I love the way they make ordinary food taste so good!

Here is a meal I made last night....
Sierra Vista Delight!
4 cups dry brown rice ( you can use white)
diced celery about 1 cup
diced onion about 1 cup
8 cloves of garlic pressed or you could use 3 Tb of pre diced in a jar
6 beef bullion cubes crushed
Put rice and water ( 8 cups) and all the ingredients in a pot and simmer for 20 - 30 min until done.
In another Pot add:
2 cans kidney beans ( drain out only a little juice, leave most of the juice)
2 cans pinto or red beans ( drain out only a little juice, leave most of the juice
2 cans black beans ( drain out only a little juice, leave most of the juice)
1 can tomatoes (use all of the juice)
season with 6 pepper seasoning (or you can add a little red pepper and some salt and pepper)
also add Cilantro
Salt and pepper to taste
Simmer for approx 20 min I added a little water it needs to be a little soupy....serve this over the rice.
Normally we eat this with no meat, but last night I simmered boneless skinless chicken in olive oil and then diced it up and added it to the bean mixture....Mmmm!
