Luba's Melt in your mouth Banana Bread2/3 cup oil 2 lg eggs 1 cup ripe bananas (1 large or 2 small) 1 cup flour 1/2 cup white sugar 1/2 cup brown sugar (I substitute sugar for 1c. honey or 1 2/3 c. cane sugar) 1 box (3 1/2oz) French Vanilla instant pudding. (I make my own pudding see recipe below, store bought adds coloring and other stuff that I don't eat ) 1/4 tsp salt 1/2 tsp baking soda 1 tsp baking powder I add 1/2 tsp cinnamon and 1 cup of walnuts This makes 1 loaf....(I used more bananas than it called for and I used raw sugar instead of the regular white that is bleached and refined. And I use unbleached flour too. I am glad she included the Homemade Vanilla pudding recipe:Instant Pudding (enough for 3 banana breads)
3 cups dry milk 4 cups sugar 1/4 tsp nutmeg 1 tsp salt (I put 1/2 tsp) 3 cups cornstarch 1/2 tsp vanilla (dry kind) Note: You can just add regular vanilla to your recipe if you do not have the dry....Just add it when you make your bread....add to the wet ingredients...Remember this pudding makes enough for 3 loaves. I use blender to mash bananas then add oil, eggs, sugar or honey blend for few seconds and then add the mixture to dry ingredients and using wooden spoon stir until flour disappears then I fold in the walnuts. Bake at 300 - 325 for an hour and a half, until tooth pick comes out clean. This is a very good Banana Bread recipe! I made 6 loaves and they turned out good and moist too. ~ Darlene ~ Enjoy!
