This is a good Salad! I made it up the other night and it was a hit! My whole family loved it, even our 2 and 4 year olds. Crunchy Zesty Salad1 small head of Cabbage sliced into small strips ( slaw style)
2 cups of chopped Broccoli
2 cups of chopped Cauliflower
2 cups of diced or chopped carrots ( I used baby carrots cut into rounds/sliced)
1 purple/red onion diced small
1 Bottle of Zesty Italian Salad Dressing
Salt and Pepper (to taste)
Stir and let marinate for about 30 min stirring 2 or 3 times.Enjoy!

Hi Darlene,
I made a very similar salad yesterday also. It was so good. We don't have bottled salad dressings here, but the dressing had oil, vinegar, lemon juice and some salt and pepper.
It was so yummy.

Thank you Beverly for telling me how to make it the ''all natural way''. I'll have to try that, it sounds really good. Some red pepper flakes and crushed garlic would also be good added.

Hi Sister Darlene, The specific recipe came from the More-With-Less Cookbook, page 252 and is called Cauliflower Salad. 2 cups diced raw cauliflower 1/2 cup sliced scallions 1 carrot sliced 1/4 cup salad oil (I use olive oil) 1 1/2T. lemon juice 1 1/2T. wine vinegar 1t. salt 1/2t. sugar dash pepper Mix well and chill before serving. It would be good with red pepper and garlic!! I really like the More with Less Book as it gives lots of recipes that don't use convenience foods. I'm in the process of stocking up on basics and trying to see how many recipes I can create out of the pantry. It's a mile walk to the grocery store, so I'm trying to keep things I use everyday on hand. Sis. Beverly

I love Cooking with Less! A dear friend gave me my copy. It makes for interesting reading too. I love to read recipes...I learn so much.

Love, ~ sister Darlene ~Dressing/Marinade (makes about 3/4 cup):1 tablespoon grated lemon peel 1/2 cup fresh lemon juice 1/3 cup olive oil 3 cloves garlic, finely chopped 1 tablespoon Dijon style mustard 1 teaspoon dried oregano leaves 1/4 teaspoon salt 1/4 teaspoon ground black pepper
Shake well until blended. Enjoy!

The dressing/marinade sounds great. I'll have to try that.
I'm going to post my 30 day food plan in the regular recipe section, as they all aren't totally healthy.
