Sierra Vista Delight!
4 cups dry brown rice ( you can use white)
diced celery about 1 cup
diced onion about 1 cup
8 cloves of garlic pressed or you could use 3 Tb of pre diced in a jar
6 beef bullion cubes crushed
Put rice and water ( 8 cups) and all the ingredients in a pot and simmer for 20 - 30 min until done.
In another Pot add:
2 cans kidney beans ( drain out only a little juice, leave most of the juice)
2 cans pinto or red beans ( drain out only a little juice, leave most of the juice
2 cans black beans ( drain out only a little juice, leave most of the juice)
1 can tomatoes (use all of the juice)
season with 6 pepper seasoning (or you can add a little red pepper and some salt and pepper)
also add Cilantro
Salt and pepper to taste
Simmer for approx 20 min I added a little water it needs to be a little soupy....serve this over the rice.
Normally we eat this with no meat, but last night I simmered boneless skinless chicken in olive oil and then diced it up and added it to the bean mixture....Mmmm!
