I was making muffins today and wanted to share this recipe with you, it is excellent It's actually a pumpkin bread recipe but I've found you can use about anything to replace the pumpkin as long as it's pureed. I make muffins and leave out the water thats called for. Pumpkin Bread (muffins) 1-1/2c.honey 4 eggs 1c.oil 2c.pumpkin 1/3c.water(leave out if making muffins) 3-1/2c. whole wheat flour( I use fresh ground pastry wheat) 1/2-1c. raisins(opt.) 1t.b.powder 1-1/2t.b.soda 1T. cinnamon 1t.nutmeg 1t.salt 1t.vanilla 1/2c. chopped nuts(opt.) I mix all the wet ingr. in one bowl, and the dry in another and then combine them. If you are making bread pour into 2 small loaf pans and bake at 350 for 40- 45 min. If you are making muffins bake at 400 for about 15- 20 min. depending on how full you fill them. I fill mine about 2/3 -3/4 full. like I said you can use about anything for the pumpkin, I've used applesauce, pear sauce, pureed zucchini, a combination of these, etc. be creative this makes about 2 dozen muffins.
