Here is one I have made a couple of times recently. My wife just loves it. I must say myself it is not bad at all. in fact it is quite enjoyable. It does not take long to make but it is a bit "labor intensive" as you have to be doing something almost the whole time.
4 Boneless-skinless chicken breasts
1 tsp. salt
1 tsp. pepper
2 Tbsp. butter
1 Tbsp. cooking oil (I used Canola oil)
For the sauce:
1/2 cup chicken broth
1/4 cup balsamic vinegar
1 Tbsp. fresh lemon juice
3 cloves garlic, chopped
1 1/2 tsp. honey
Sprinkle chicken breasts with salt and pepper
Melt butter with oil in a large skillet over medium-high heat taking care not to burn the butter; add chicken and cook 6 to 7 minutes on each side or until done. Remove chicken and keep warm.
Add chicken broth and next 4 ingredients to same skillet and cook 5 minutes or until slightly thickened, stirring to loosen particles from bottom of skillet. Slice chicken into pieces about 1/4 inch thick and spoon sauce over top of it.
The first time I made this following the directions above I found that no matter how long I cooked the sauce it did not thicken. The last time I made it I dissolved about 1 Tbsp. of corn starch in a little over 1/4 cup of water. I also increased the honey to about 2 - 3 tablespoons. I slowly added the corn starch/water mixture to the sauce stirring constantly and then continued to cook and stir the sauce until it began to thicken. I did not want it to get really thick so I watched it and when it got to the consistency I liked I pulled it off the heat.
On my first attempt I made white rice and butternut squash with it. The sauce is delicious over the rice and also tasted good on the squash. When I did it the second time I made rice again and also fresh broccoli. The sauce was really good on the rice and the broccoli. After modifying it a bit as I wrote above it tasted much like a sweet and sour sauce. I decided that the next time I make it I am going to add a bit of freshly grated ginger root to it.
In case anyone is wondering about me and cooking, I love to cook and my dear wife really enjoys the things I make. She says she can tell they are made with love. So I let her relax while I enjoy one of my favorite hobbies.
