Hi Sister Darlene, Here's my recipe for pancakes. I usually use half whole wheat flour and half unbleached white flour. Jeff doesn't care for the taste of all whole wheat.
I've used this recipe for probably 15 years and it always turns out good.
Tasty Pancakes
2 beaten eggs 2 cups sour milk 4 T. melted butter or oil 1 tsp. soda 2 1/4 cups flour 2 tsp. baking powder 1 tsp. salt 2 tsp. sugar
If sweet milk is used, omit soda and increase baking powder to 3 teaspoons.
Beat eggs until light. Add milk and butter/oil. Sift together dry ingredients. Beat flour mixture into egg/milk mixture.
Good on a medium hot griddle.
Here's my economy pancake syrup. recipe.
1 3/4 cups white sugar 1/4 cup brown sugar 1 cup water. Bring to boil, cover and cook 1 minute. Cool slightly. Add: 1/2 teas. vanilla 1/2 teas. maple flavoring

Beverly,
Thank you so very much for those helpful recipes! What a blessing! That's what I did wrong...I used ''all'' whole wheat. Too heavy!
Do you have a whole wheat biscuit recipe? I have an Oatmeal recipe that taste really good , but they are not light and flaky they are more like a dinner roll.Oatmeal Biscuits1/2 cup rolled oats
1 3/4 cups all-purpose flour (unbleached)
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
4 Tb (1/2 stick) butter, chilled
3/4 cup buttermilk
Preheat oven to 425'F. Grease a baking sheet.
Combine oats, flour, salt, baking powder, baking sodain a mixing bowl. Stir and toss to mix and blend all dry ingredients.
Cut the cold butter into pieces and add to the flour mixture. Using your fingers or a pastry cutter, cut or rub the butter into the flour until the mixture resembles crumble topping,
Add the buttermilk and stir the mixture with a fork until it somewhat holds together.
Gather the dough up and place on a lightly floured board or serface,
Knead about 10 times, pushing some of the pieces into the ball (this is a rather dry dough)
Pat or roll into a 1/2 inch thickness
Cut into 2 inch rounds and places 1 inch apart on a baking sheet.
Bake 12 - 15 min or until lightly browned. Serve hot.Enjoy!

I made the muffin recipe this morning and added a can of pumpkin and some cinnamon, cloves, and nutmeg to the recipe... They were great.. Notice I said were.. My children ate four each... They are just as soft as the white flour type however it is a good feeling to give your family breakfast and it is real food.... glenda

I did the pancakes today and they turned out light and fluffy... My family just loved them.. Hope they will help sister Darlene...
I know we are doing our best to get rid of all the white flour and stuff in our diet.. However you still want them to taste good....
