Someone mentioned beans and rice on another post. This is not 'New Orleans' style, but it's simple and yummy. I just mix together about 2-3 cups of brown rice and 2-3 cups of black beans with a few carrots chopped small, a few tomatoes chopped small, about 1c tomato sauce (or enough to make it kind of creamy), and a little salt and garlic powder. That's it. I do not like using things from cans (unless I can it myself) so I made up my own tomato sauce recipe. I just mix 1- 6oz can of tomato paste (just tomatoes, no salt or other ingredients), 1c water, 1/2t garlic powder, 1/2t salt, 1/4t onion powder and about 3/4-1t sweetener or a small amount of stevia. Adjust seasons to taste - simmer for a while. This is a great start to spaghetti sauce too - just add in your fresh veggies, tomatoes, olive oil, etc.
