Just wanted to share my 12 year old daughter's granola recipe. She doesn't really use exact measurements, but here's the general idea:
Preheat the oven to 250 degrees.
In a mixing bowl add about 4 cups of rolled oats, 1 cup of shredded coconut, 1 cup of honey and 1 cup of raw sunflower seeds. Really- other than the oats and honey, the possibilities are pretty endless (Sometimes she adds raisins, or dried cranberries, raw sesame seed. etc...). Mix well.
Spread it all out on a cookie sheet- preferably one with a lip. Put it in the oven, set the timer for 5 minutes and go do something else. She usually does the dinner dishes at this time.
When the timer goes off, stir the granola around, making sure to move what's on the outside towards the inside and vice versa. This will go on, every 5 minutes for about 30 minutes or so, or until the oats take on a golden hue.
Let it all cool on the pan. Store in an airtight container (We use a 1/2 gallon mason jar). Serve with milk poured over for breakfast (which is great when you're in a hurry), or make porridge:
For the porridge:
In a bowl (not metal) with a lid: Add 1/2 cup of granola (this can be plain oatmeal) for each person eating
Add about 1/2 of the amount per person in hot water.
Add about 1/4 c yogurt
Add honey (if not using granola) to taste and fruit and/ or nuts/ seeds
Cover with the lid and leave it on the counter overnight.
In the morning it can be eaten as a cold cereal or heated with milk on the stove (which is how we like it).
