Chocolate Cake and Frosting
Cake: 1/2 cup butter 2/3 cup honey 2 eggs 1 banana, mashed 1 teaspoon vanilla extract 3/4 cup water 1 cup whole wheat pastry flour 1/3 cup cocoa or carob powder 1 teaspoon baking soda 1/2 teaspoon sea salt
Frosting: 1/4 cup butter 1/3 cup honey 1 cup dry milk powder 1/4 cup cocoa or carob powder 1/4 cup water 1 teaspoon vanilla extract
Preheat oven to 350* F. Grease and flour an 8 inch square pan. Sift together the flour, 1/3 cup cocoa, baking soda and salt. Set aside.
In a large bowl, cream together the 1/2 cup butter and 2/3 cups of honey until light and fluffy. Beat in the eggs one at a time, then stir in the banana and vanilla. Beat in the flour mixture alternately with the 3/4 cup water. Pour batter into prepared pan.
Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
To make the frosting: In a large bowl, cream 1/4 cup butter and 1/3 cup honey until smooth. Blend in the milk powder, cocoa, 1/4 cup water and 1 teaspoon vanilla. Beat until smooth and spread on cooled cake.

That recipe sounds so yummy.. I have a question.. can you find whole wheat pastry flour around the regular flour in the store? I am new to learning to cook more healthy .. I can't recall seeing this kind of flour near the regular white flour i always use.. Thanks..

can you find whole wheat pastry flour around the regular flour in the store? It would depend on the store. When I lived in a large city many of the big grocery stores carried "health food" items. Where I live now these kinds of things are hard to find except at a health food store and those are 90 minutes to 2 hours away. I order many things online.....amazon.com now sells groceries and have many health food items. I did not actually buy pastry flour. I had a friend that gave me a Y2K sealed 5 gallon bucket of soft white wheat berries that I ground.
