This may be a silly or dumb question , But is there a point in time when grape juice becomes wine?. The reason I ask. We have some canned juice made from real grapes. D/W cooked it down then canned it/ hot water bath. So it is 100% real. And it has be on the shelf for oh say a year or two. Well anyhow I was bring up things from the celler and though boy it is time we start using this. So when I had some it seemed a little strong. Now maybe this is because it is real. But if it has become wine then I need to empty it out. Coffee and tea is as strong of drink as i get So help anyone. Bro Randy

Brother Randy, there is not much chance of the grape juice turning into wine under those circumstances.
In order for grape juice to turn into wine it must go through fermentation. In order to ferment it must have the fermentation agents introduced to it. There are various strains of bacteria which are used to produce this change.
In your case there is much more chance it will just go sour on you. Of course canned under the conditions you have detailed there is not much chance of that happening either. Not for a long, long time anyway. You have a much better chance of opening a can or jar of vinegar than wine.
I don't think you need be very concerned about it. The trick is just to smell it when you open it. Your nose will tell you if it is spoiled or not.

I agree with George. Usually I will water grape juice down to our prefferred tastes because it is so strong. My mother in law makes great grape juice! However it is too strong to drink (for me) at 100% strength.

Dear Bro. Randy, We canned grape juice a few years ago. Quart jars, We open strain press out all the juice from grapes, then add aprox 1 1/2 to 2 qts water, we add a little sugar too. This is so good. What a blessing to have home canned grape juice. Were still enjoying ours it's from 2002. Canned stays good for a very long time. Blessings, ~ sister Darlene ~
