Here is one I came up with a few years ago that is really easy to cook and quite tasty. The prep work takes about 4 times as long as the coking. I am not going to put the quantity of the various vegetables because that will be determined by the size of your family or the number of your guests.
Yellow Crookneck Squash Zucchini or Mexican Gray Squash Yellow onion Garlic Fresh Tomatoes
Slice the squash fairly thinly but not too thin. Coarsely chop the onion Mince the garlic Cut the tomatoes in large chunks
Saute' the onion and garlic in a large skillet or wok until it just starts to caramelize. Immediately add the squash (both kinds) and using a stir fry method cook until the color gets very bright and they are done through but still crisp. Add the tomatoes and cook, stirring constantly, until the tomatoes are warmed through.
I love to serve this with a big bowl of hot cooked rice. It is very good just seasoned with salt and pepper and of course you can add seasonings as you desire. Some fresh basil or sage might go well with the vegatables
