This is a very moist & tasty cake that is easy to make.. We love taking this to family get-togethers and dinners. 4 Cups of sliced and chopped apples (I leave the peels on) 2 eggs Put chopped apples in a large bowl, break eggs over them and stir with a fork. Next, in a separate bowl, stir together the following: 2 cups sugar 2 cups flour 1 tsp baking soda 1 and a half tsp cinnamon half tsp baking powder half tsp salt After stirring the above, sift the mixture over the previously made apple mixture. Stir well. Next add: half cup oil (I use vegetable oil) 1 tsp vanilla half cup chopped nuts (optional) Stir well and pour into an 8 X 12 baking pan. Bake at 325*F for 1 hour. This makes a nice moist cake and does not even need to be frosted. (We never frost it..it is good as is) We also often substitute pears for the apples in this recipe, or combine the two! For us in comes in handy in the fall when we have tooooooo many pears! This cake can also be made ahead and frozen for later use.

I will try this!!! We have had two HUGE boxes of apples dropped off to us, and I have run out of canning jars for pie filling and sauce!!! Maybe I will make a few of these to throw in the deep freeze! thanks, Liz
