This is a very good meal to make out of leftovers. Leftover vegetables and leftover meat can both be used. I'm not sure whether there's already a fried rice recipe on here, but here's how I cook it. It's deceptively easy to make and after very little practice can taste just like take-away fried rice.
What you need: -1 onion (chopped finely) -2 carrots (cubed finely) -1 can of corn -250g of peas -A couple of handfuls of diced meat (leftover meat works well, fritz/devon is good, but anything works). If you want vegetarian fried rice, beat and fry half a dozen eggs until well cooked, and cut into small strips or cubes. -A bowl or so of rice, cooked the previous day. Again, we tend to use leftovers – if we have a rice meal, we cook extra. Yellow rice works especially well for added flavour and colour. -2 eggs -a frypan
What to do: 1-Prepare frypan by putting a dab of oil or a couple of scoops of butter in. Add onion, carrot, and meat, and cook until carrot is softening and browning lightly. Add corn and peas. 2-Add rice, and mix well. 3-Beat eggs and add. Stir everything around until the eggs have cooked. 4-You can add soy sauce if you like, but don’t add much. If you have yellow rice, you don’t need any at all. 5-Serve and enjoy!

Thank you for the recipes, Rachel. I have a particular fondness for fried rice. We don't eat soy so this one is especially good for us.
