Tonight I want Hamburger...I don't know quite yet what I am going to do with it, but It is going to be hamburger...I will let you know when I get there... ;D Love Sis Debbie

Ok, I figured it out...We are going to have grilled hamburger patties (90% fat free) ;D, corn on the cob, steamed yellow crooked neck squash (my favorite) and broccoli, with a tossed salad....I plan on having a big bowl of 98% fat free buttered popcorn later for a snack...I have been using a very small "George Forman Grill" that belongs to my daughter, it is great...but not practical for large families, so I went to Walmart yesterday and put a jumbo size one on layaway...I can't wait until I can it get out, it is so much more healthier to eat grilling your food, the fat just drains off and it cooks within minutes... ;D Have a good evening and dinner...Love Sis Debbie

Veggie pizza w/out cheese (no dairy for us) - the toppings were red and orange peppers, green onions, port. mushrooms, broccoli, tomatoes, fresh basil and black olives. The crust was made of corn, quinoa and chickpea flour (no wheat for us either). I had a craving for oranges, so that's what we'll have for a snack later on.

Tonight we are going to have stuffed green peppers.. I'm not sure what to have with it.. Any ideas??
Here's my recipe for stuffed peppers..
Stuffed peppers
1 lb hamburger 1 egg 1 small onion chopped fine 1 cup spaghetti sauce 1 cup uncooked rice spices and salt and pepper
Ok I cut tops off of peppers dice them and put in freezer for later - clean out peppers
in a large bowl mix everything else, stuff the peppers and then you can do 1 of 2 things
1~ wrap each one in plastic wrap individually and then put into a gallon zip bag and freeze till ready to use 2~ put into a baking dish, bake for 1 hour at like 350-375
When ready to use the frozen ones just thaw in fridge and bake as above!! I think they freeze great!!

I don't know what we will have for supper tonight.. I'm thinking we might be going over to my mom's.. so we will either eat there or eat out with them..
for lunch today we are having left over stuffing from the stuffed green peppers.. ;D .. I made ALOT of stuffing.. so I baked it in a loaf pan.. it is kind of like a meat loaf.. so we will have that in a bit with macaroni and cheese.. mmmmm.. ;D

Were having a creamy green bean and beef casserole!
My men folk are at Wal Mart buying supplies for their Father son trip together tomorrow. They will fish, hike, site see and visit the Mennonite General store for lunch.
It sounds like alot of fun! I'm planning a special day here with my girls and little son.
It's supposed to be a beautiful day!

Here with the temperatures pushing over 90 degrees and high humidity I am going for a cold supper..
I cook up the ground beef, drain it and add my taco seasonings..
Shred Lettuce, Chop tomato and onion, refried beans will be warmed, cheese, salsa and sour cream..
It's a taco salad..I will just serve that with toasted tortilla chips in the oven no deep frying for me today :-)

Tried cooking for me and Dad tonight since it's just us so I fixed Asian noodles... that turned out terrible. It was like eating gingery dry-wall.

My Dh's birthday was yesterday as well as Father's Day of course. I did a lot of cooking and baking special things for him yesterday so tonight I am taking a break and using up a lot of leftovers from other meals. I am quite pleased how his birthday cake turned out.....I was a little nervous as you might remember I got rid of all the white flour and sugar a few weeks ago. I used to cook with whole wheat and natural sweeteners years ago but have not in a long time and no longer had all my nautral cook books. I made a Chocolate Cake with Chocolate Frosting using whole wheat pastry flour and honey as the sweetener and it turned out pretty good. Anyway here is the simple meal we had tonight: Sausage Patties Split Pea Soup Whole Wheat Biscuits Tomato and Cucumber slices (drizzled with olive oil and balsamic vinegar)
